What’s on the plate: Origin, responsibility and trust
A recent media report by the Kronen Zeitung (“Unser Schnitzel: Billig gekauft – teuer serviert”, 13.01.2026) has once again brought the topic of the origin of meat into focus. It shows how great the need for clarity and honest information on the plate is – especially for a dish that stands for Austrian food culture like no other.

Origin labeling creates clarity and trust
This quote from a recent article in the Kronen Zeitung sums up the explosive nature of the topic of origin.
Transparent origin labeling in the food service and retail sectors is a central key to trust. It gives consumers:inside orientation and enables them to make informed decisions. Traceable origin is an essential component of quality, especially for sensitive products such as meat.
For us at gourmetfein, this discussion is nothing new. Transparency has been an integral part of our responsibility for many years – towards consumers:inside as well as towards our farmer partners.
In order to clearly demonstrate this responsibility, we issued a sworn declaration in May 2020. In it, our owner Fritz Floimayr personally vouches for the accuracy of all details of origin.
